Paris-Midi : fleur d’oranger et lemon curd

Partir Outre-Atlantique est une aventure de fou (et un brin prise de tête j’avoue :p) ! C’est absolument génial ! … Mais quand on ne décide pas de la date de départ c’est un peu moins bien : surtout quand cela signifie ne pas fêter Noël avec sa famille ‘-.- Résultats : il fallait que je prépare un pré-Noël pour ma petite famille.

Après des semaines à regarder Le Meilleur Pâtissier et encore plus après le super clou du spectacle avec Philippe Conticini, je mourais d’envie de faire des choux avec un craquelin. N’étant pas tellement fan du chou praliné façon Paris-Brest, j’ai décidé de faire un Paris-Midi en axant les saveurs sur le Sud avec de la fleur d’oranger et du citron ! Un vrai délice 🙂

RECETTE

1. Ingrédients :

Pour le craquelin

  • 40 g de beurre doux
  • 50 g de sucre (idéalement de cassonade)
  • 50 g de farine
  • 1 pincée de fleur de sel

Pour la pâte à choux 

  • 125 mL eau
  • 125 mL lait
  • 1 cuillère à soupe de sucre
  • 1 pincée de sel
  • 50 g de beurre
  • 150 g de farine
  • 3 oeufs

Pour la crème pâtissière à la fleur d’oranger

  • 500 mL de lait
  • 100 g de sucre
  • 1 pincée de sel
  • 1/2 gousse de vanille
  • 2 cuillères à soupe de fleur d’oranger
  • 40 g de fécule de maïs (type Maïzena®)
  • 6 jaunes d’œufs

Pour le lemon curd

  • 1 citron vert
  • 3 citrons jaunes non traités
  • 1 cuillère à soupe de fleur d’oranger
  • 1 cuillère à soupe de fécule de maïs (type Maïzena®)
  • 80 g de sucre glace
  • 2 œufs entiers

2. Marche à suivre :

Pour le craquelin

  • Malaxez le beurre, le sucre, la fleur de sel et la farine jusqu’à l’obtention d’un mélange sableux,
  • Étalez la pâte sur environ 2 mm d’épaisseur entre 2 feuilles de papier sulfurisé,
  • Découpez des disques de 4 cm de diamètre (selon la taille de vos choux),
  • Réservez au réfrigérateur.

clin d'oeilVous aurez certainement trop de craquelin. Vous pouvez détailler toute la pâte en cercles et les congeler en attendant une prochaine utilisation. Séparez les disques avec des feuilles de papier cuisson.

Pour la pâte à choux 

  • Portez à ébullition l’eau avec le sucre, le sel et le beurre,
  • Hors du feu, ajoutez la farine en une seule fois et mélangez vivement à feux doux pour dessécher la pâte (une fine pellicule se forme sur le fond de la casserole),
  • Ajoutez les œufs un par un (je vous préviens, ça muscle ; l’autre solution évidemment c’est le robot, ça va beaucoup plus vite !) → Attendez que la pâte soit bien homogène avant chaque ajout,
  • Arrêtez de mélanger quand la pâte prend un aspect satiné (la pâte est assez souple),
  • Préchauffez votre four à 180°C (chaleur statique / pas de chaleur tournante),
  • Sur une plaque de papier sulfurisé, tracez un cercle de 21 cm de diamètre, puis dessinez 8 cercles d’environ 5 cm de diamètre à l’intérieur,
  • A l’aide d’une poche à douille, déposez la pâte à choux dans les cercles, formant une couronne, (les choux doivent se toucher)
  • Déposez un disque de craquelin sur chaque chou,
  • Enfournez pour 40 minutes sans ouvrir le four,
  • Lorsqu’ils sont dorés, arrêtez le four et entrouvrez la porte du four,
  • Laissez refroidir et réservez.

Pour la crème pâtissière à la fleur d’oranger

  • Faites bouillir le lait avec la gousse de vanille fendue,
  • Blanchissez les jaunes d’œuf avec le sucre, ajoutez-y la fécule de maïs,
  • Lorsque le lait est à ébullition, ôtez la gousse de vanille,
  • Versez une partie du lait chaud dans le mélange œufs-sucre en fouettant rapidement,
  • Reversez l’intégralité de cette dernière préparation dans le reste du lait chaud et remuez à feux doux jusqu’à l’épaississement de la crème,
  • Retirez du feu et ajoutez l’eau de fleur d’oranger (Si la préparation est trop liquide, poursuivez un peu la cuisson),
  • Faites refroidir la crème pâtissière au plus vite en mettant le bol la contenant dans un saladier d’eau froide avec des glaçons,
  • Saupoudrez légèrement de sucre glace ou filmez au contact afin d’éviter la formation d’une pellicule en surface,
  • Dès que la crème est suffisamment froide, réservez-la au frais.

Lorsqu’elle est froide, vous pouvez ajouter 100 g de crème fouettée à cette crème pâtissière à la vanille et à la fleur d’oranger. Cela permet d’alléger la texture de la crème en plus de rendre le tout bien plus gourmand 😉

Pour le lemon curd

  • Nettoyez correctement les citrons,
  • Roulez les citrons sur la table afin d’en extraire plus facilement le jus après,
  • Prélevez le zeste d’un citron jaune et du citron vert,
  • Pressez tous les citrons pour en extraire le jus,
  • Dans un cul de poule, mélangez bien le sucre glace avec les zestes de citron,
  • Filmez et laissez reposer une petite demi-heure pour que les parfums se diffusent au mieux,
  • Ajoutez le jus des citrons (8 à 10 cL), la fleur d’oranger et les 2 œufs entiers battus avec la fécule de maïs, puis mélangez,
  • En faisant cuire au bain-marie, faites épaissir la crème sans cesser de la remuer,
  • Laissez refroidir et conservez au frais.

Pour le montage

  • Découpez le chapeau de chaque chou (idéalement juste sous la limite du craquelin),
  • A l’aide d’une poches à douille, répartissez la moitié de la crème pâtissière à la fleur d’oranger sur les choux,
  • A l’aide d’un cornet déposez un peu de lemon curd au centre de chaque chou (l’équivalent d’une demi-cuillère à café),
  • Déposez le reste de la crème pâtissière afin de recouvrir le lemon curd,
  • Refermez chaque chou,
  • Saupoudrez très légèrement de sucre glace.

Et voilà, il ne vous reste plus qu’à déguster 😉 J’espère que vous adopterez ce Paris-Midi à votre tour 🙂

& IN ENGLISH

As I will move to the other side of the Atlantic very soon and before Xmas, my family and I decided to celebrate it a bit earlier (at least for my Santa’s role :p). On this occasion I chose to make a good French pastry. I think everyone abroad knows the Paris-Brest. It’s a very (very very) French recipe. Unfortunately I am not really fond of the taste of nutty caramel of the Paris-Brest. On the other hand, I really like citrus fruits. That’s why my Paris Brest is indeed a Paris-Midi (The South of France is commonly called Midi). Made of chou buns, a crispy top (called “craquelin”), pastry cream with orage blossom and lemon curd. I hope you’ll really like it as my family does!

1. Ingredients:

For the “craquelin” / crispy top

  • 1.4 oz softened butter
  • 1.8 oz caster brown sugar
  • 1.8 oz flour
  • 1 pinch salt

For the chou bun dough 

  • 4 fl oz water
  • 4 fl oz milk
  • 1 tablespoon caster sugar
  • 1 pinch salt
  • 1.8 oz butter
  • 5.3 oz flour
  • 3 eggs

For the pastry cream with orange blossom

  • 17 fl oz milk
  • 3.5 oz caster sugar
  • 1 pinch salt
  • 1/2 vanilla pod
  • 2 tablespoons orange blossom
  • 1.4 oz corn starch
  • 6 egg yolks

For the lemon curd

  • 1 lime
  • 3 lemons
  • 1 tablespoon orange blossom
  • 2.8 oz icing sugar
  • 1 tablespoon corn starch
  • 2 eggs

2. How to?

For the crispy top

  • Combine softened butter, brown sugar, salt and flour,
  • Mix just until the dough comes together,
  • Shape the dough into a flat disk between 2 sheets of greaseproof paper (thickness: 1/2 inch max)
  • Cut small disks in it, the diameter should be about 2” but it depends on the size of your chou bun,
  • Cool it in your fridge.

clin d'oeilYou may have too much dough. That’s not a problem! You can froze all disks too many and use them for another recipe using chou bun. For freezing, do not forget to put all disks between 2 sheets of greaseproof paper: it will be much easier afterwards!

For the chou bun dough 

  • Boil water and milk with sugar, salt and butter,
  • Remove from heat and add all flour, mix quickly to dry the dough (stop when you can see a very thin layer in the sauce pan bottom),
  • Add each egg one by one (it’s quite tough so do not hesitate to use a mixer ^^) → you have to wait for the dough to become satine smooth before adding another egg,
  • Mix until you have a smooth glossy paste,
  • Preheat your oven to 350°F (180°C, gas4) → avoid using convection oven: chou buns do not like  drafts!
  • On a baking tray, draw a 8” circle and draw inside 8 small circles of 5” diameter in order to shape a ring,
  • Using a pastry bag, shape 8 chou buns in all of 8 small circles (each chou bun touch its neighbor),
  • Heat for 40 minutes WITHOUT OPENING your oven,
  • When chou buns are well glazed, stop heating,
  • Partially open your oven to dry all chou buns and avoid them to flop,
  • Cool chou buns before using them.

For the pastry cream with orange blossom

  • In a large mixing bowl, whisk together the eggs and sugar until they turn a pale gold colour,
  • Whisk in the corn starch and set aside,
  • Place the milk, orange blossom and vanilla bean in a heavy-bottomed saucepan,
  • Bring to a gentle simmer, stirring frequently,
  • Remove the pan from the heat and slowly pour half of the hot milk onto the egg mixture, whisking all the time (the aim here is to prevent the eggs from scrambling!),
  • Return the mixture to the remaining milk in the pan and bring the mixture back to the boil and simmer for one minute, whisking continuously, or until smooth.
  • Cool as quickly as possible, by sitting the bowl of pastry cream in another larger bowl of ice water,
  • Dust with icing sugar or cover with film to prevent a skin forming,
  • When cooled, refrigerate until needed.

Once cooled, you can add 3.5 oz of whipped cream to the pastry cream. Thus the cream will be lightened for lots of greed 😉

For the lemon curd

  • Clean lime and lemons and remove the zest from one lemon and the lime,
  • Put the lemon zest and the sugar into a heatproof bowl, cover with film and wait for half an hour (it’s for a better savor diffusion),
  • Squeeze lemons and the lime (about 3 fl oz),
  • Add lemon juices and orange blossom to the sugar,
  • Whisk eggs and corn starch before stirring them into the lemon mixture,
  • Whisk until all of the ingredients are well combined,
  • Sit the bowl over a pan of gently simmering water, then leave to cook for 10-13 minutes, stirring every now and again, until the mixture is creamy and thick enough to coat the back of a spoon,
  • Remove the lemon curd from the heat and cover with film to prevent a skin forming,
  • Set aside to cool,
  • Keep in the fridge until ready to use.

For the finishing

  • Cut the top of each chou bun (just under the crispy top),
  • Using a pastry bag, put half of the pastry cream on the base of each chou bun,
  • Using a cornet, put a bit of lemon curd (about half of a tea spoon) on each chou bun,
  • Use the remaining pastry cream to cover the lemon curd on each chou bun before closing them,
  • Dust with icing sugar very lightly.

And your Paris-Midi is finally ready! I hope you will like it 😉
