Pot pie – poulet, poireaux, épinards

Pour continuer dans ma suite de recettes automnales et ambiance « comfort food », voici un classique américain : la pot-pie. Une « pot-pie » regroupe toutes les tourtes salées que vous pouvez imaginer même si en général elles sont au poulet avec une sauce gravy et des haricots. Dans le Nord de la France, un des classiques est la tourte poulet poireaux, j’adore ça – d’ailleurs c’était un des seuls trucs que je mangeais avec plaisirs à la cantine ! J’ai donc décidé de faire une pot-pie à ma façon avec du poulet, du poireau et un peu d’épinards frais : un délice qui a ravi les papilles ici !

To carry on with my previous fall recipes on a comfort food touch, here is an American classic: a pot-pie. AUsually, they are made of chicken, gravy and some sort of beans. In the North of France, one of the classic “pot-pie-like” pot-pie is made of leeks and chicken. I really like this association and actually it was one of the only thing I would eat without complaining at school! I decided to make my own version of a pot-pie with some chicken tenders, leeks and fresh spinach: everyone enjoyed it here, and I hope you will too.

RECETTE

1. Ingrédients :

  • 1 pâte brisée salée
  • 1 pâte feuilletée
  • 3 escalopes de poulet
  • 2 poireaux
  • 1 oignon
  • 2 poignées de feuilles d’épinard frais
  • 250 mL de cidre, de bière ambrée ou de vin blanc sec
  • 1 dizaine de noix
  • 2 œufs +1 œuf pour la dorure
  • 2 cuillères à soupe de crème fraiche
  • Huile d’olive
  • Sel, poivre

2. Marche à suivre :

  • Préchauffez votre four à 180˚C,
  • Nettoyez et émincez l’oignon et les poireaux – avec un bon tiers du vert,
  • Dans un poêle chaude avec un peu d’huile d’olive, faites revenir les légumes et lorsqu’ils commencent à caraméliser, ajoutez le cidre, puis laissez réduire,
  • Ajoutez les épinards frais et laissez s’évaporer les éventuels liquides restants, avant de réserver dans un bol,
  • Détaillez le poulet grossièrement puis faites-le griller en utilisant la même poêle,
  • Lorsqu’il commence à prendre une jolie couleur, sortez-le de la poêle et hachez-le au couteau – assez grossièrement afin qu’il reste de beaux morceaux,
  • Dans un grand bol, battez les œufs et la crème, puis ajoutez-y les légumes et la viande,
  • Hachez les noix et ajoutez-les à la farce, salez et poivrez,
  • Graissez un moule à tourte et déposez-y la pâte brisée en laissant dépasser la pâte d’un petit centimètre, puis piquez la pâte,
  • Enfournez le fond de tarte pendant 10 minutes, sortez-le un peu avant la fin et badigeonnez le fond et le tiers inferieur des bords avec un œuf battu puis ré-enfournez pour le peu de temps restant,
    Cela permet d’éviter à la pâte de détremper lors de la cuisson.
  • Disposez la farce au centre de la pâte brisée,
  • Badigeonnez le bord de la pâte brisée avec un peu d’eau et/ou d’œuf battu et recouvrez la tourte avec la pâte feuilletée,
  • Scellez la tourte en marquant le tour en enfonçant régulièrement la pointe d’un couteau, formez 3 à 4 trous au centre puis badigeonnez le dessus de la tarte avec le reste d’œuf battu pour la dorure,
  • Enfournez pendant 30 minutes jusqu’à ce que la tourte soit bien dorée.

RECIPE

1. Ingredients:

  • 1 salted pie crust
  • 1 puff pastry sheet
  • 3 chicken tenders
  • 2 leeks
  • 1 onion
  • 2 handful fresh spinach
  • 250 mL (1 cup) hard cider, bier or dry white wine
  • About 10 walnuts
  • 2 eggs + 1 egg for the egg-wash
  • 2 tablespoons sour cream
  • Olive oil
  • Salt, pepper

2. Directions:

  • Preheat your oven to 350˚F (180˚C, gas 4),
  • Wash and slice the onion and leeks – also slice about one third of the green part of leeks,
  • In a hot skillet, sauté veggies with a tablespoon of olive oil, when they start to get brown, pour in hard cider and let it simmer,
  • When it is totally reduced, stir in fresh spinach and let remaining liquids evaporate, then set aside in a bowl,
  • Roughly chop chicken tenders and grill them using the same skillet as the veggies,
  • When the chicken starts having a golden color, set aside and chop it one more time – make it finely but not too much so that you can still get some bites – not sure I’m very clear, am I?,
  • In a large bowl, whisk eggs and sour cream than add in veggies and chicken,
  • Chop walnuts and mix them with the preparation, salt and pepper,
  • Grease a pie tin and lay in the salted pie crust letting about 1 cm (1/2 in) on the edges, then prick the crust,
  • Bake the crust for about 10 minutes, remove it from the oven just before the end and brush it with the egg wash and re-bake it for the remaining time,
    It will allow the crust not to be soaked.
  • Spread evenly the stuffing preparation in the tin,
  • Brush the edges of the pie with some water or egg-wash and top the pie with the puff pastry sheet,
  • Using a fork or the tip of a knife, crimp 1/4-inch around edges to seal, and brush top of the pie with egg-wash, then score dough, forming a small X in the center,
  • Bake the pies for 30 minutes or until crust is golden brown.
